- Get For the Prawns
- Take 1 tsp butter
- Take 1 tsp extra virgin olive oil
- Make ready 1 tsp minced garlic
- Take 10 prawns/shrimps shelled and de-veined
- Take to taste Salt and freshly ground black pepper
- Take 1 tsp lemon juice
- Get Preparing the rest
- Take 1/2 cup sliced chorizo
- Make ready 1 cup haloumi cut into blocks
- Make ready 2 tsp crushed garlic
- Prepare 10 cherry tomatoes cut in half

- Take 1 Tblsp Basil Pesto
- Take 2 servings of cooked linguine reserve 1/4 cup of pasta water
- Get 1/4 cup pasta water
- Get Drizzle olive oil
- Take 1/2 Cup Fontina cheese
- Make ready 1/2 cup Pecorino Cheese
- Take Basil to garnish
Meanwhile, bring a large pot of water to the boil and cook the pasta until only just al dente. Heat the oil in a sauté pan over a high heat. Add the chorizo and cook for a couple of mins until the oils have been released, then add the tomatoes, a pinch of sugar and some seasoning. Serve with a generous grating of parmesan scattered.
Instructions to make Chilli, Cheese, Chorizo Linguine:
- Prepare prawns/shrimps by heating a teaspoon of butter and teaspoon of extra virgin olive oil in a pan. Add in garlic and sautè briefly before mixing in the prawns/shrimps. Pan fry until colour changes to pink. Season with salt and pepper and mix in a teaspoon of lemon juice. Set aside.
- Heat Saucepan over medium heat then add in chorizo and heat through.
- Add in haloumi and brown along with chorizo
- Once browned mix in garlic then add in cherry tomatoes followed by cooked pasta, crushed chilli, basil pesto, reserved pasta water and drizzle of olive oil then toss lightly
- Add in the fontina and about half of the pecorino and mix well.
- Finish by adding in the cooked prawns and topping with basil and remaining pecorino
How to make spicy chorizo tomato linguine. Making the sauce could not be easier. Peel the casing off the chorizo and slice into little cubes. Pan fry with a pinch of fennel seeds until the sausage starts to release its lovely smell and spicy oil. Stir in the onions, garlic and a splash of olive oil and cook until softened.
