Steps to make Banana Fondant:
  1. Peel and cut about 1 inch on all banana.
  2. Heat pan add olive oil, stir fry green runner beans and chilis, and sear top and bottom of bananas. Add chicken stock, season and finish in the oven. After 10mins take out and serve. Sprinkle some chopped Basil.
  3. Garnish with pureed beetroot.
