I love soda bread and never thought to add figs and walnuts. Figs are one of my all time favorite things to eat, dried or fresh. In fact, while traveling in Ireland we carried a package of dried figs to snack on while site-seeing, because there are not many luncheonettes on those country roads!

The ingredients needed to make Fig Soda Bread:
  1. Get 1 Fig (dry or semi-dry)
  2. Take 250 grams White flour
  3. Get 1/2 tsp Baking powder
  4. Make ready 1/2 tsp Baking soda
  5. Take 1/4 tsp Salt
  6. Make ready 1 1/2 tbsp Sugar
  7. Make ready 100 ml Milk
  8. Get 100 ml Plain yogurt

Sift together flour, baking soda, salt, and cinnamon. Add the flour mixture to the first mixture alternating with the buttermilk. Prepare a greaseproof baking sheet by dusting with wholemeal flour. Alternatively, grease and line a baking.

Steps to make Fig Soda Bread:
  1. Preheat the oven to 180℃. Sift all the dry ingredients together. Combine the milk and yogurt.
  2. In a bowl with the sifted dry ingredients, add the fig, cut into bite-sized pieces, and mix lightly.
  3. Make a well in the center of the bowl and add the milk and yogurt mixture. Fold it until incorporated (do not knead).
  4. Roll the dough into a round shape and place it onto a cookie sheet. Dust it with a small amount of cake flour (not listed) with a tea strainer. Make a shallow crisscross slit with a slightly wet knife.
  5. Bake it in the oven for 35 minutes. Lower the temperature to 170℃ and bake another 10 minutes and it is done.
  6. Insert a toothpick in the center. If dough sticks on it, bake a little longer.

Stir in the figs and nuts. Transfer the dough to the prepared pan and sprinkle the top with sparkling sugar, if desired. This bread is a favorite in my family. My little ones love mashing up the figs and I love having their helping hands in the kitchen. The reward of eating this yummy, sweet bread isn't that bad either.
