To assemble the pie, butter a casserole dish generously and flake the set-aside fish, discarding any skin and bones. Lay the fish in the casserole dish and pour about half of the parsley sauce on top (reserve the remainder of the sauce to use as a pouring sauce on the finished pie). Strain the infused milk through a sieve into a large shallow sauté pan. Lay all the fish fillets (not the prawns) in the milk.

- Poach fish in milk and mustard seeds
- Flake plaice and remove bones and leave other fish to be chunky. Set aside a cup full of the milk stock.
- Fry leek and garlic until softened and my mixwith the fish and prawns.
- Add the fish, prawn, leek mix to a pie dish and cover with a cup full of the milk stock and season. Add chopped up boiled eggs and place well.
- Chop up sweet potato, skin on, peel white potato and chop both and boil. When tender, drain. Place in a pan with a tea towel on top and allow to dry out.
- On a very low heat return potatoes, add plenty of butter, a good glut of milk and lots of Parmesan and white pepper and mash mash mash.
- Top the mash onto the fish in a very rustic way. Once on top grate more Parmesan on top and pop in the oven for about 40 mins at 180.
- Serve with salted buttered green beans and enjoy 😉
Use a slotted spoon to transfer all the fish to a dish and leave to cool slightly. Slice the fish into strips then place in an earthenware dish with the spinach and eggs and mix together, pouring over the creamy vegetable sauce. The cooked potatoes should be drained and mashed - add a bit of oil, sea salt, black pepper and a touch of nutmeg (if using). Spread on top of the fish. Spread the mashed potato on top and fluff up with a fork.
