I added a generous pinch of Aleppo pepper - if you like things hotter than go ahead an heat it up with as much pepper as you need 🙂 Layers of scallops, crab, shrimp, sole and Monterey Jack cheese, topped with a tart and creamy hollandaise sauce and baked to a turn, add up to a delightfully delicious romantic evening. Adding the flounder to a soup she already loved made this a pretty easy trial and delicious too! My favorite soup is a creamy soup and you could even leave the fish out of this soup. You could even add in cubes of ham, pork, or even some roasted chicken.
Instructions to make Flounder Soup:
- Wash the flounder cutoffs and wipe away any excess moisture. Coat with the sake and salt and set aside. Re-hydrate the wakame seaweed.
- Bring the dashi stock to a boil in a pot. Add the soy sauce and a pinch of salt to flavor.
- Add the flounder cutoffs and lightly simmer. Remove any scum. Taste, and if you find it's not salty enough add more salt.
- Put the cooked cutoffs and wakame in a bowl. Pour in the soup from Step 1, and top with mitsuba and it's ready.
The base is so delicious and will adapt to any protein you choose. It might take a couple tries for the novice smoker to time it right, but the effort is worth it. Rinse the scallions and thinly slice the light green and white sections. Bring the broth to a boil. Cook, stirring, until the onion is tender, about five minutes.
