Mango sambar is one of the flavorful sambar just like drumstick sambar. I am not a big fan though. But mom and MIL makes this very often in mango season.

To begin with this particular recipe, we have to first prepare a few components. You can have mango sambar using 17 ingredients and 9 steps. Here is how you can achieve that.

The ingredients needed to make Mango sambar:
  1. Make ready 2 tbsp Oil
  2. Get 1 tsp Mustard seeds
  3. Take 1 tsp Fenugreek seeds
  4. Take 1 tsp Urad dal
  5. Get Curry leaves 1 sprig
  6. Get garlic cloves 5 nos
  7. Prepare 1 tsp Hing powder
  8. Make ready Red chilli 2 nos
  9. Prepare Green chilli 2 nos
  10. Get Onion 1 nos
  11. Take Tomato 1 nos
  12. Take Mango 1 nos
  13. Take 1 cups Toor dal
  14. Get Tamarind juice- small lemon size 1 nos
  15. Take 1 tsp Turmeric powder
  16. Get 1 tsp Chilli powder
  17. Get 1 tbsp Sambar powder

The dal has a right balance of sourness from the raw mango and sweetness from the jaggery that is being used in curry. Raw Mango sambar i have tasted in my friend's house few years back, but somehow i didn't liked it. But i don't say she didn't make it nice, because mango sambar one of her signature dish. Somehow i don't like the tanginess of mango in sambar.

Instructions to make Mango sambar:
  1. Wash toor dal and cook well in a pressure cooker along with 2 garlic, turmeric powder, green chilli, Hing powder and salt for 2 whistles.
  2. Soak a lemon sized tamarind in a water for 15 mins and take the juice.
  3. In a pan add oil, when it is hot add red chilli, mustard seeds, fenugreek seeds, urad dal,remaining garlic,Hing powder and Curry leaves. When spluttering add onions and tomato, mix it well and cook till it becomes mushy.
  4. Now add turmeric powder, chilli powder and sambar powder. Mix well till the raw smell goes.
  5. Add the cubed mango pieces and mix well to the masala.
  6. Now mash the cooked dal and add to the onion tomato masala.
  7. Keep the flame in medium low and cover it for 5 mins, mix it in between to avoid burning.
  8. Now extract the juice from the tamarind that is soaked in water and add to the dal. Add more water to this if you according to your consistency and let it boil for 15 mins in medium low.
  9. Now switch off and have the tasty mango sambar with hot steamed rice.

Later my sister was insisting me to try out the maanga murungakaki sambar, and. Sambar is a main course in any South Indian meal.
