The ingredients needed to make Sev (Gram flour noodles):
  1. Take 1 Cup gram flour (besan)
  2. Get 1/4 Teaspoon turmeric powder
  3. Take 1 Teaspoon red chilli powder
  4. Get 1 Teaspoon garlic paste (optional)
  5. Make ready 1 Tablespoon oil
  6. Make ready 1.5 Cups Oil for deep frying

Steps to make Sev (Gram flour noodles):
  1. Take a broad vessel and grease the bottom with oil
  2. Add all dry ingredients and mix it well
  3. Add 1 tbsp oil and mix it well
  4. Add garlic paste, its optional in case you want it to be ginger flavored you can add ginger paste at this point
  5. Knead medium soft dough
  6. Once the dough is almost ready and if it is sticking to your hands remove it using a spoon then grease your palms with oil and then knead it a bit and keep it aside
  7. Use the machine shown in Image1 and Image2, It is Sev (noodle) maker machine.
  8. Divide dough in to two equal portions
  9. Grease the machine with oil from inside then put first portion in it and close it
  10. Heat the oil for frying on medium heat
  11. Once oil is ready, hold the machine vertically on top of the pan with one hand and with the other hand turn top handle of the machine, this will help to push the noodles out from the bottom directly in to the oil
  12. While turning the top handle, try and make circle of noodles matching the diameter of the pan
  13. Fry it for about 20 seconds and flip it over
  14. Fry it until light golden color as shown in Image 3; it will take 20-25 seconds

Kids and elder also love this crispy dish. Gram flour, besan is a pulse flour made from ground chickpeas. Also add pinch of hing and ½ tsp salt. combine well. Now add ¼ cup water (or as required). Sev is a delicious fried vermicelli snack that is made from besan/ gram flour.
