  3. Now chop green chillies and ginger fine
  4. Mix all the ingredients i.e chopped green chillies,ginger and salt to paste and mix well.
  5. Now fry the vadas in oil, maintain the temperature of oil, otherwise vadas will soak extra oil. and they will be too oily to eat.
  6. Once all the vadas are fried, keep aside and fill the bowl with Luke warm water. add asafoetida and a pinch of salt to water.
  7. Water should be Luke warm,not hot or very warm, and don't forget to add asafoetida,it gives nice taste to our vada,
  8. Now add one by one all the fried vadas to water filled bowl n keep aside for at least ½ n hour.
  9. Now take one vada at a time and squeeze out excess water from it with the help of your both the palms, make sure u don't apply much pressure, the process should very gentle to keep the vada intact and now place all the vadas one by one on the plate.
  10. Take a bowl add curd and sugar and with the help of whisker,whisk the curd to make smooth paste like consistency.
  11. Take the curd,it should be sweet,not sour.
  12. Now time to assemble all the ingredients together.
  13. Take a plate of vadas and pour the sweet dahi all over the vadas
  14. Now add sweet chatney all over them.
  15. Now add mint chatney
  16. Now time to add our rosted cumin powder, kashmiri red chili power and black salt.
  17. U can mix all the spices powders in one bowl and sprink all over the vadas.
  18. Be generous while adding curd and spices.they will enhance the taste of your vada and everyone will keep asking you the recipe.
