In Sri Lanka, nobody goes around hunting for frozen coconut because you have abundance of fresh coconuts in supermarkets or, in some cases, in your own backyard.   1. In a mixing bowl add the seived flour, grated coconut, salt and mix them well together.
  2. Add water little at a time and Knead it to make a smooth dough.
  3. Cover the dough in a kitchen towel and set aside for few mins. You can opt this step if you are in a rush.
  4. Divide the dough into medium size and roll them into balls.
  5. Take the balls and slightly flatten them. Dust the balls with flour and roll them into medium thickness roti with a help of rolling pin.
  6. Heat a tawa preferably iron cast. Grease the tawa with few drops of oil and cook the roti for about 2 mins on low heat or until you see golden brown spots.
  7. Drizzle one or two drops of oil, flip over and cook for 1-2 mins and remove them.
  8. Serve the roti with pol sambol or curry of your choice.

Thick, round chapatis are rolled out and cooked in a skillet. This coconut Roti (flat bread) is eaten almost every day for breakfast in central of Sri Lanka. This is also a busy tourist spot due to its cool climate. These roti's are made with freshly grated coconut, white flour, water and salt. This is a favourite amongst us Sri Lankans.
