- Prepare 1 cup flour
- Make ready 2 tablespoons white sugar

Top these fluffy pancakes with fresh fruit, your favorite flavor preserves or syrup. Stack cooled pancakes between sheets of waxed paper or cooking parchment paper. To reheat, unwrap pancakes, and remove waxed paper. My pancakes came out with the perfect amount of sweetness and so fluffy.
Instructions to make Fluffy Pancakes:
- In a large bowl: flour, baking powder, sugar and salt.
- Using a fork, sift together the dry ingredients.
- In a microwavable container, put the butter and cook it for approximately 20 seconds. Just make sure it's melted and not burnt. Set aside until later.
- Put the milk and eggs in the bowl with the dry ingredients and whisk until combined. Take the melted butter and stir into the batter.
- Spray your pan with non-stick spray and turn heat to medium. You want your pan pretty hot. You'll be working fast!!
- After about 5 minutes, wet your hands a little bit and sprinkle it over the pan, if the drops start bouncing around, your pan is ready.
- Drop 3-4 tablespoons of batter into the same spot on the pan and let sit for a minute or so. Carefully work your spatula under the pancake and flip it. Cook the other side about the same amount of time, take out of the pan and place on a plate.
- Repeat step 7 until you're out of batter.

Love your tip of cooking on lower heat and wiping the butter in pan. The combination of low heat and very little butter allows the pancakes to cook without the threat of browning butter. I've updated the post quite significantly. For extra-fluffy pancakes substitute self-raising flour for plain flour and still use the baking powder. Serve the pancakes with fresh strawberries and good vanilla ice cream.
