My best success was flipping without lifting the spatula- slide the spatula under the pancake, and plop it onto the other side.
- Cook until golden brown. Add toppings and enjoy!
For this second version, I tried using just egg whites. This one definitely tasted like banana pancakes. It was a little lighter in texture than the version above where I used a whole egg. Mash banana in a bowl using a fork until it becomes a wet consistency. Add egg and whisk mixture until batter is smooth.
