The flank steak tacos and grilled pineapple avocado salsa were a big hit. I sauteed a large onion as well as a yellow, orange and red pepper in a tablespoon of butter and a tablespoon of olive oil as an addition to this meal. Grilled with charred edges caramelized from a marinade, sliced across the grain for tenderness and served up as the main course, in these flank steak tacos, I'm loving each and every bite. For these tacos I'm using leftover flank steak from the night before when I made my go to marinated and grilled flank steak.
Steps to make Flank Steak Tacos:
- Put flank steak in gallon zipper bag. Add lime juice and massage meat.
- Combine Chili Powder, lime rind, salt, Chipotle seasoning and black pepper. Shake into bag with meat and rub to cover. Put meat bag in refrigerator for 1 hour.
- Set grill to medium-high heat. Cook flank steak for 6 minutes per side or until desired doneness.
- Let rest for 10 minutes.
- Cut meat diagonally across grain.
- Serve topped with your choice of salsa (I highly recommend my avocado salsa recipe) or onions and cilantro.
- Note: toast your taco shells on the grill, they only take about 15-20 seconds until they puff up and they're so much better than on a pan or microwaved.
Feel free to grill up a fresh one and use in this recipe, too! Season with cumin, chipotle powder, salt and freshly ground black pepper. Steak tacos sounded fantastic as I think this marinated flank steak is the best cut of meat for tacos. To make steak tacos, I placed a few slices of the meat on top of a lightly warmed corn tortilla (if you want to make your own, check out my Homemade Corn Tortillas recipe) and topped it off with some pico de gallo, a dollop of guacamole. Flip the steak and season the other side.
