Biscuits inspired by my favourite cake, a Bakewell tart and so it was born - Cherry Bakewell Biscuits. They are incredibly moreish and Hubby & I are trying not to eat them all in one sitting, and yes they do taste like the hallowed Bakewell. The story of Bakewell Caribbean Bakery began many years ago when a young boy by the name of Andy Pollard started helping his family's small bakery in Guyana. Andy was an employee of the well known Bakewell bakery in Guyana, later he helped start a bakery by the name of Bakewell in New York.

Instructions to make Bakewell Cookies:
  1. Cream together the almond extract, butter and both sugars in a large bowl
  2. Add the egg and mix well.
  3. Pour the whole pot of glace cherries into a small bowl and cut them up smaller with a knife.
  4. Add into the bowl the flour and ground almonds along with the chopped cherries
  5. Grate the marzipan over the top to add some extra almond flavour!
  6. Preheat the oven to gas mark 2/ 150C. Line two large baking trays with greaseproof paper.
  7. Mix everything together with your hands until you make a dough. This is one to roll your sleeves up for!
  8. Roll the dough into small balls around the size of a golf ball and place onto a baking tray
  9. Using the back of your hand push them down to flatten slightly
  10. Sprinkle a few flaked almonds onto each biscuit
  11. Bake in the oven for 30-35 minutes. You may need to rotate halfway to ensure equal cooking!
  12. Wait until the biscuits have cooled slightly to make the icing. Then mix together 125g of icing sugar with another splash of almond extract and then enough water to make it into a smooth icing consistency.

I just couldn't resist making them - because the idea of the flavours of a Bakewell tart put into a Blondie is just an all round win in my opinion! Almond and Jam… a delicious combination.
