Chorchori in Bengali - a medley of vegetables, cooked over low heat and not very spicy. The Botanical name of Pui Shaag is Basella alba. - Cut and clean the shaak first, cut the leaves and then chop them, also cut the danta(tender stalk) approx 1 inch long pieces and slit them in between.
- Cut all the vegetables as said above. Wash and keep them aside.
- Now heat a Kadai, add mustard oil, temper it with panch phoron.
- Then add begun,alu, kumro and danta of pui shaak,fry them.
- Add turmeric powder, salt and sugar,stir well. Cover and cook for 5 minutes.
- Add cumin powder, coriander powder, ginger powder and green chilli paste. Mix well cook for 2 minutes more.
- Now add 1/2 cup of water into this. Mix, cover and cook on low flame.
- When the veggies are half cooked add pui shaak.Mix thoroughly, cover and cook until all the veggies are done.
- Your Pui Shaak'er Chorchori is ready to eat.
