  1. First soak rice with water for atleast half an hour.
  2. Heat oil in a heavy bottomed pan,add cumin seeds and minced garlic,stir for few secs.add tomato and green chilli stir well.add fenugreek leaves along with all chopped veggies.add salt and and cook covered for few minutes (4-5)on medium heat.
  3. Add turmeric powder,red chilli powder stir well.add 2-3 cup of water,add soaked rice and stir very well.
  4. Bring the methi rice to a quick boil.once the rice comes to a boil,turn the heat low,cover the pan and allow the rice to cook until all the water is completely absorbed.
  5. Once the water is completely absorbed turn the heat off and allow the rice to rest for about 5 mins.
  6. After 5 mins.open the pan, add ghee and stir in to the rice to well combine.
  7. Methi matar pulao is ready to serve.serve with fresh curd or any kind of raita of ur choice.
