The ingredients needed to make Steak and Quinoa Stirfry:
  1. Take 2 tbsp coconut oil
  2. Get 1/2 medium onion
  3. Make ready 3 clove Roasted Garlic
  4. Make ready 1 cup Sliced mushrooms
  5. Take 1 each Small red, orange and yellow pepper
  6. Take 10 oz steak (as much or as little as you want)
  7. Prepare 1/3 cup Cooking Sherry
  8. Prepare 2 tbsp Soy sauce
  9. Make ready 1 cup cooked quinoa (more if wanted)
  10. Prepare 1 Fresh cracked pepper
  11. Take 1/2 tbsp butter - OPTIONAL

When I first found out it existed, I knew it was my kind of food, and had to make it for you guys right away! Stir fry, gosh I love the stuff! I love how easy it is to make, that you can add whatever vegetables and meat are your favorites, and that This past week I had a craving for some Asian food so I decided to make these Chicken and Vegetable Stir Fry Quinoa Bowls. This Tofu Quinoa Stir Fry is quick, easy and very healthy.

Instructions to make Steak and Quinoa Stirfry:
  1. Finely dice the onion.
  2. Cut the tops off the 3 peppers, clean out the seeds, cut them in half and then cut them into thin strips.
  3. Cut the mushrooms in half and then slice them (about a cup when sliced)
  4. Season the steaks with salt and pepper to your liking and then slice them into thin strips.
  5. Place pan or wok on med-hi heat. When hot add coconut oil or whatever oil you prefer. Toss in onions. After a minute add the peeled, unchopped roasted garlic (diced if using raw garlic).
  6. After another minute as onion starts to brown, toss in mushrooms and sautee for a minute.
  7. Add in peppers tossing to coat with mushroom and onions. Sautee for a couple of minutes. (You want these to still have a bit of crispness at the end)
  8. Add steak and brown on both sides…about 1 and 1/2 to 2 minutes.
  9. Add Cooking sherry and let it bubble for a minute then add the soy…bubble for another minute.
  10. Add the quinoa mixing it with everything. Start with a cup and add more if you like. You want there to be enough quinoa to pick up the sauce but not too much that there is quinoa with no sauce.
  11. No.salt will be needed but add some fresh ground pepper to taste.
  12. Optional: to add some creaminess, add 1/2 to 1 tbsp of butter before serving.
  13. Serve in a bowl or on a plate making sure you get a bit of everything. As a final touch, I put a couple of cubes of feta on each serving

Stir vegetable broth and quinoa together in a saucepan over medium-high heat. Bring to a boil, cover, and reduce heat to a simmer.
