Using the same oil, add in curry paste. Fry until aromatic and oil separates. Add in long beans and brinjals. Add in a little water for easier stirring of ingredients.

- Chop up vegetables and pineapple.
- Soak belacan and assam in warm water. Blend onions/shallots, garlic, ginger, lemongrass and 1/2 cup water into a paste.
- Mix paste with curry powder and salt.
- Fry salted fish, curry leaves, and lemongrass in oil. Stir in curry paste. Stir in 1 cup coconut milk.
- Stir in vegetables and pineapple. Cover and cook.
- Stir in rest of coconut milk, water, assam, belacan, sugar and salt. Once vegetables are soft and oil gets separated, serve over steamed rice.
Add in cabbage leaves [if using] and fried salted fish bones. The original recipe uses Spanish Mackerel slices but I'm using Threadfin fish/Ikan Senangin [from my hubby's fishing trip]. Of course the fish tasted good being freshly caught but the curry gravy is also good with the sweet flavour from the pineapple when cooked till tender becomes sweet and flavourful. Transfer to a wok, and mix in remaining coconut milk, chicken, fish sauce, sugar, and bamboo shoots. Mix the red bell pepper, green bell pepper, and onion into the wok.
