Bring the sauce back to the boil. Once it boils, turn off the heat and stir in the parsley and lemon juice. Put the fish and mushroom mixture into a casserole dish. Pour on the sauce and top off with the mashed potato.

  1. Boil potatoes with the skin on until soft. Drain and let cool until you can touch.
  2. Return potatoes to the pot and mash them. Heat on low to evaporate any extra water.

  4. Preheat oven to 200°C.
  5. If using fresh fish, boil it for 5 minutes. Drain and let it cool, remove any bones or skin.

  9. Add mushrooms (you might want to saute them in butter beforehand).
  10. Spread the mashed potatoes over top everything.
  11. Bake at 200C for 20-30 minutes until bubbling and a bit brown.
